Inside the Burrow TC kitchen

“Burrow TC is a fun new restaurant here on the West Side in Greilickville, CA inspired by cuisine,” said chef and owner John Larson.

He says thinking re-imagined or re-inspired.

“Things that you know very well, but we just put our own little spin on it,” John said.

Like this burger, Culinary Director Dallas Dziedzic is finishing.

“It’s unpretentious,” he said. “It looks like a burger with fries, but once you start tasting it, you really get the seasonings and you’re like, ‘what did they do to that?’ Dallas said.

“Everyone makes a burger, but whatever they do with their flavors, it’s just different,” said Liz Arbut, a frequent customer.

Liz says attention to detail is spared in no dish.

The wedge salad for example, each piece carefully crafted and stacked perfectly.

“It’s like every bite has something in it, it’s so awesome like that,” she said.

The Burrow TC extends to West Grand Traverse Bay with its Dine ‘N’ Dock program.

“We’ve got 100 seats here, but then we’re like, well, there’s, you know, a couple hundred boat launches there,” John said.

“They deliver to boats, I mean, how much more can you ask for?” Liz asked.

All you have to do is call and you can order the same menu as if you were dining out.

“The fact that you can have a gourmet meal on your boat is pretty awesome,” Liz said.

Going out, surfing the waves or indulging in the dining room, the new Traverse City restaurant hopes you will do as the name suggests.

“The burrow is kind of like a place for animals to commune and stuff like that, so they all come to that place and commune known as the burrow, so that’s kind of where it came from,” said said John.
